smoking garlic and all sorts

I needed to get a portrait of David Stechler of the Lewes Smokehouse for the Lewes Food Market monthly booklet. He was filleting fish when I arrived but he kindly started up the fire for me with his oak chippings. I love the photogenic atmosphere smoke can create but goodness, it does get in your eyes. The smokehouse was full of garlic, but soon had the fresh trout and mackerel added to it. More local food producers can be found here.
