Flint Owl bread

Today post on local food is about bread. Real proper bread, made by hand in small batches and allowed to ferment and do all the things it needs to do to become delicious and satisfying. Flint Owl Bakery have recently opened up a very successful cafe on the High Street in Lewes but when I went to photograph them, they were only selling through shops and to restaurants and pubs. It made me realise the punishing schedule of a baker. I was up at the crack of dawn to get to them but they had already been up all night by the time I got there. It must require such passion and dedication to do that every single night.
